How do I know which Hadiths/Fatwas are false, which are non-binding, or to be interpreted oppositely?

I’m studying Islam, but hadiths and fatwas are contested even among Muslims, leaving me thinking “am I meant to believe this in blind faith? Or am I to think it’s complete non-sense and go with my own judgment?”.

When I cite some hadiths, I’m scolded for saying it’s false anti-Muslim propaganda, when I’m simply reading hadiths from Muslim websites like www.searchtruth.com and asking why it was done and what it means.

Eg. When a hadith says Mohammed had a man’s hands and feet cut off and eyes burned out, I’m told it’s a complete lie against the Prophet, while other Muslims might say Mohammed did no wrong so it was just and we must accept it. Who and what am I supposed to believe?!

(below are more examples of confusion, but you don’t have to read them, my question’s been made)

(1) Chess and board games are not haram VS
- Grand Ayatolla Al Sistani fatwa that it is haram. This applies to online chess too.
- Hadith: “Yahya related to me from Malik from Nafi from Abdullah ibn Umar that when he found one of his family playing dice he beat him and destroyed the dice. Yahya said that he heard Malik say, “There is no good in chess, and he disapproved of it.” Yahya said, “I heard him disapprove of playing it and other worthless games. He recited this ayat, ‘What is there after the truth except going the wrong way.’ ” (Sura l0 ayat 32). (Book #52, Hadith #52.2.7)”

(2) Mohammed would not cut off someone’s feet and burn their eyes VS
“they were (brought) and handed over to him. He (the Holy Prophet) got their hands cut off, and their feet, and put out their eyes, and threw them on the stony ground until they died. (Book #016, Hadith #4130)”

(3) Drinking camel urine is digusting and would not be ordered VS
Narrated Abu Qilaba: Anas said, “Some people of ‘Ukl or ‘Uraina tribe came to Medina and its climate did not suit them. So the Prophet ordered them to go to the herd of (Milch) camels and to drink their milk and urine (as a medicine). (Book #4, Hadith #234)

(4) Mohammed didn’t physically speak to Moses and God VS
Mohammed, Moses and God bargained on how many prayers to say while in heaven.

(5) Female circumcision is not encouraged VS
“When you circumcise then do not cut severely, since that is better for her and more pleasing to the husband.” (Reported by Abu Dawud and Al-Baihaqee and declared Hasan by Shaikh Al-Albani)… “Better for the woman and more pleasing for the husband” and that it is “Better of the face and more pleasing to the husband.” (Reported by Al-Baihaqee)
Sambo- If I’m to use my own logic, rationality and reason, then that’s simply atheism, where everyone should just do what “feels right” based on their own opinion.
